Wild fennel grows profusely on the Amalfi coast, as it does in California. The seeds from the tall plants are harvested by hand in October. When the seed heads are dry they are sifted and macerated in pure alochol for about 40 days before being blended with sugar and bottled. Insanely flavorful, this like-Sambuca-but-better makes a perfect after dinner digestivo or cocktail modifier.
